Ô de Novi
For this vintage, the estate’s first certified organic wine, we wanted to make a wine with plenty of structure and balance, sweetness and length, a great red wine but without the woodiness.
Grapes: 70% Syrah, 30% Grenache.
Rendement : 30 hl/ha.
Method: Maceration in thermo-regulated stainless steel vats for at least 3 weeks with crushing, devatting and pump-over.
Aging: 18 months in stainless steel vats.
