This wine is the essence of the estate, reflecting both the strength and the elegance of its predominantly Syrah wines. That's why we’ve called it NOVI.
Grapes: 85% Syrah, 12% Grenache, 3% Mourvedre.
Rendement : 25 hl/ha.
Method: Traditional method at controlled temperature and long maceration of at least 4 to 5 weeks with punch-down and devatting.
Aging: 15 months in barrels and demi-barrels (600 liter barrels).
